From March 15^th- 28^th you will be able to visit The Exquisite Cake Company and sample our delicious cakes at our new stall situated on the top floor of The Mall (Galleries) Broadmead. We will be serving freshly baked cupcakes with new flavours every day from 9-6pm Monday to Saturday and 11-5pm on Sunday. We are running special promotions for boxes of 4 and 12 cakes and will also be selling cakes individually.

Happy New Year to all past, current and future Exquisite Cake Company customers! We hope you all had a fabulous festive season and started 2010 with a bang!

Getting fit this year? Don’t do without your favourite little treat to keep you motivated! Remember our mini cupcakes contain only 50 calories, that’s a little more than in an apple and it will satisfy your sweet craving without you feeling guilty!

Our next farmer’s market will be Weston, Saturday 9^th January from 9am to 12.30pm, where we will be displaying two brand new ranges of cupcakes; ChocoBerry, a deliciously soft chocolate sponge filled with oozing raspberries and topped with a choc and raspberry frosting, and CocoPina, a cocktail cupcake of sorts without the alcohol, with a smooth coconutty frosting and sweet chunks of pineapple in the sponge. By popular request we will also be carrying our dark and magical Guinness Cupcakes.

As always, our cakes are made with really good ingredients, no trans-fats, additives or artificial flavours, and we only ever use real farm butter in our sponge and icings, so you can be confident that you’re eating something natural and tasty.

Once again The Exquisite Cake Company will be attending Weston Farmer’s Market this Saturday, and between 9am and 12.30pm you can wander around the Christmas market enjoying delicious treats. The Exquisite Cake Company has brought cupcakes to the West and will this week be featuring their Christmas range including Christmas Cheer, chocolate-based cupcakes crammed with brandy soaked cranberries and topped with gooey chocolate ganache, and Brandy Velvets, the favourite red velvet topped with brandy butter icing, along with a whole host of festive toppings.

We take orders for your Christmas Cupcakes and will deliver on Christmas Eve within the Bristol area, ensuring your cakes are as fresh as can be and ready for your guests to enjoy.

As usual, all of our cakes are made with the finest ingredients, local eggs and butter and organic flour. We use 70% Green and Black’s chocolate in our chocolate cakes and real vanilla pods in our Milly Vanilly variety.

This Saturday will see the first appearance of The Exquisite Cake Company at the Weston Farmer’s Market. As always each cupcake is hand and home-made, using excellent quality local ingredients including butter from Lye Cross Farm and free-range eggs from Tower House Lane Farm, both no more than 10 miles from our kitchen. Using the best ingredients ensures you can enjoy a delicious cake like no other, as well as happily knowing where it is from and that it contains no nasties. Our cakes are always made with proper ingredients, in a proper kitchen by a proper person, no mass-produced Tesco-like cakes here thank you very much!

With over 25 flavours and toppings to choose from, our cupcakes are the finest in the land and perfect for a Saturday morning treat with a cup of tea. We have Froggies for the kids with little green eyes and Red Velvets for the grown-ups as well as many more!

Red Velvet Cake - What's all the fuss about?

So why all the hype over some red cake. It is just red sponge after all, and it uses red food colouring which can't taste that great surely? Or can it?

The Red Velvet recipe dates back decades (although no definitive source can be confirmed) and is firmly established in most major bakeries within America. In popular culture, the red velvet has made its name in Steel Magnolias in 1989, Sex and the City and in other films since. In New York, famous bakery Magnolia, has provided red velvet cake to society for years, whereas recently in London, the deed has been recreated by Hummingbird Bakery to much delight from residents and tourists alike. And in North Somerset, The Exquisite cake Company has perfected the recipe and now provides the West Country with this taste of heaven. But why is this tempting treat so popular?

Its outrageous red colour grabs your attention like no cake before and when piled with sweet cream cheese icing, you can do nothing to resist your urges. The ingredients include a chemical reaction of natural alkaline and acid which causes the light, yet rich sponge veiled in cocoa. While beetroot can be used to achieve the red cake, it leaves a bitter an somewhat unappetizing flavour that should not be associated with this sweet treat and therefore in Bristol, natural red colouring is used to keep your chemical concerns at bay, without compromising the taste.

For grand celebrations, birthdays and weddings, this cake will provide the ultimate centre piece, however, enjoy a private moment alone with a red velvet cupcake and you'll understand what all the fuss is about.

Bristol Private Catering go to London

Last Friday The Exquisite Cake Company teamed up with Light IQ, an exclusive London based residential lighting design company, to provide their Summer Party catering in trendy West London.

In a beautifully designed garden we served a party of 10 a barbeque meal of vine plum tomatoes and fresh mozzarella balls with home-made pesto and torn basil leaves, a home-made new potato salad with greek yogurt and zesty lemon rind, rainbow wholemeal cous cous with dried cranberries, apricots, sun-blushed tomatoes and hazelnuts, fresh free range organic chicken breast and king prawn skewers with roasted vegetables and a sweet chilli dip and tziki sauce to accompany. To finish, everyone enjoyed a Red Velvet cupcake each with home-made Malteaser ice cream and fresh local raspberries. Fiery Cider Punch and Champagne made for a very jolly evening.

We ended with an Exquisite Company trade mark ‘pass-the-parcel’ and everyone had a laugh and a giggle.

Why Cupcakes?

On the same day that President Obama chose to present veteran White House Correspondent, Helen Thomas, with cupcakes on her 89^th birthday, we ask “Cupcakes, what’s all the fuss about?”

Why choose cupcakes over any other kind of cake? There are plenty of delicious inventions out there in the larger variety that just cannot be replicated into anything smaller, so why has the world suddenly gone mad over all things cupcake?

Sure, their adorable size makes them appear even more edible and tempting than a slice of cake, where real commitment is needed to get a plate, a knife and a spoon in order to enjoy it. You can also dispose of the evidence quickly, contradicting anyone who says “weren’t there 6 cupcakes a minute ago”, and as long as you get those crumbs out of the corner of your mouth quick enough and shake your head in a convincing manner, they will leave the room slightly unsure but nonetheless accepting what you say. There is also the brilliant factor of choice; you want the slice of cake furthest away from you on the plate when it is being offered around? Tough. You must accept the one closest to you because that is polite. You want the really thick gooey part of the cake where all the icing seems to have converged? Tough. You have to cut from outside in and not just dig in where you fancy. But with cupcakes however, each little fellow has a good dollop of icing, a perfect amount of soft soft sponge to quell your craving, and the best part is you can muse over whichever one takes your fancy the most and select it over all the others, (in fact, I’m sure if you listen closely, each cupcake is saying “pick me, pick me!” in an excited cake-like voice).

So were cupcakes Obama’s cake of choice because of their size, their cute appeal and their appearance? Was he exercising foresight into how the cake might be distributed among fellow coworkers without having to bring a knife and plates along with the cake? Or was he keeping up with the recent trend in baked goods where all things cupcake have exploded into society. Whatever his reasons, this doesn’t explain why cupcakes were so popular to begin with, why Obama even had a choice when he (or one of his minions) popped out to the shops to get a birthday treat for Helen Thomas.

Popular culture can be traced back for causing a rise in popularity of the cupcake, starting with Carrie in Sex and the City, where she visits Magnolia Bakery, home of American Cupcakes in New York, and munches into a pink frosted cupcake with surprising energy. Since then, hundreds of cupcake eateries have popped up all around America, adding yet another fast-food carb to the already bulging selection for re-energizing snacks whatever time of the day or night. In England, we are now home to the Hummingbird Bakery among other cupcake makers and Nigella Lawson can be pin-pointed for revamping the cupcakes and introducing them back into our home-baking repertoires with her book, The Domestic Goddess.

Maybe cupcakes are popular because of their size and their mobility, maybe it has been amplified with popular culture references, or maybe it is simply because some cupcake case manufacturer in America suddenly realized he had way over-produced and had been stock piling cases since the 80’s so decided to do a huge publicity push to get rid of them all. Whatever the reason, I’m just pleased as punch that cupcakes are so darn popular.

Less is more.

Cupcakes needn’t be all about cream and gooey icing to be a success. There is something inexplicably delicious about biting into soft sponge to find zingy fruity flavours like peaches and raspberries, or the smoothness of caramalised banana surrounding your taste buds. And of course there is always the slightly less sinful feeling when indulging, as the cupcake contains fruit and therefore must be good for you.

The problem I find though is when adding the fruit of the moment into your lovingly prepared cupcake mixture, there never looks to be enough fruit in the recipe. So you add a few more strawberries, or a few more slices of banana thinking that when you bite into the warm treat, the more fruit, the better.

Stop.

More fruit isn’t better in cookery, a lesson I found out when I over-enthusiastically added double the quantity of banana to my first batch of banana cupcakes, thinking that ten slices was just not going to cut it. In fact, less really in more in this instance as with fruit, there comes liquid, and as all good bakers will know, even if you are not going to follow a recipe, you should obey the basic ingredient ratio of dry:wet.

So as my much anticipated super duper bananary cupcakes emerged from the oven, I met them with distress to find that their middles had all sunk.

In this instance, it wasn’t so much of a failure as you might think; I loaded the middles up with toffee cream and topped them with a smidge of vanilla icing and produced a delicious batch of ooey gooey bananaramas, but for future fruit cupcakes I’ll try to hold back.

The joy of cupcakes, and believe me there is a real sense of joy when it comes to a cupcakes, is their size and shape. No matter how beautiful a grand birthday cake or three tiered wedding cake may look to begin with, once it has been hacked into equal size portions by an inexpert hand, all cake will look the same; sponge, filling, sponge, icing. The cake may have been handled, extra plates, napkins and cutlery are needed, and there is always that stretching gap between cutting the cake and serving it that will leave people wondering just what is happening to it in the kitchen.

Then, on arrival of their much-awaited slice, people will either munch it quickly and come looking for more, or they will try and stash their plate in the foliage of the nearest pot plant when they see that their slice has no jam, or too much marzipan or a solid chunk of vanilla sponge that just puts them off totally.

From an early age we are all programmed to want more; more toys, more money, more space, more from life…more cake. So as the revered celebration sponge is winging its way to you, you will almost undoubtedly steal a quick glance at your neighbours slice to see how yours ranks. Larger, and you’ll tuck in with a satisfying smirk on your face, smaller, and you will feel hard done by.

As a caterer this is a tricky and long-winded procedure to undertake; however, the arrival of the Cupcake solves all our problems. Equal sizes, equal icing, equal filling, no fiddly portion cutting and it always looks good from first sight to first mouthful. It is hygienic as each cake is handled by a wrapper and it goes well with summer fruits and a dollop of ice cream to turn a tasty treat into a satisfying dessert.

There is something so alluring about seeing a hundred cupcakes rather than one big lump of cake. Maybe it appears more delicate, maybe it is the individuality of it – there is no sharing with a cupcake, it is all yours; maybe it is the repetitive pattern, the personal selection, the individual treat or the definitive size – you cannot keep cutting off thin slivers of cake (imagining that they don’t count as it isn’t a whole slice), when it’s gone it’s gone, (unless of course you decide that two cupcakes is justifiable).

The cupcake is the new tray bake, so whenever your next celebration may be, give the cupcake a chance.
